A beautifully-aged Rum from the Dominican Republic with a deep, warm flavor profile.

Sans Wine and Spirits was founded in 1985 by Lou Sans. After working for his father Nick in the Spirits business for years, he recognized a need for Latin inspired Spirits in Southern California. Based in Irvine, California, the company has grown, developing a range of Tequilas, Sangrias, Vodkas, and Rums — including Los Jarochos, a neutral Spirit from Veracruz made from cane juice.

Bacoo Rums are made farm-to-bottle in central Dominican Republic where the weather and volcanic soil is perfect for growing sugarcane. Bacoo 11 Year Old Rum is normally hard to get in the US. The Spirit was bottled and sold mainly in the UK. But we managed to get our hands on a few cases and are eager to share. The cane juice is fresh-pressed and fermentation is started within hours — and it makes a difference. After passing through the column still, the Spirit is aged on-site in the Caribbean sun for a full eleven years in ex-Bourbon casks.

Smartass Corner:
The "Bacoo" are mythological minor spirits (ghosts) referred to in the cultures of Guyana and the Caribbean. Sort of mischievous poltergeists that toss stones and move things at night. They are said to become trapped in corked bottles. The word likely comes from the West African word "Baku," meaning "little brother."

The aroma is rich and complex with notes of milk chocolate, roasted nuts, and turbinado sugar.

Flavor / Taste / Palate
The palate leads with pralines, followed by espresso and dark chocolate.

A little bit of etymology; nobody really knows where the word Rum comes from. The most popular suggestions are Rum (the Romani word for 'potent'), Rumbullion (an uproar), Saccharum (sugar in Latin), and Rummer (a Dutch drinking glass).
Rum used to be accepted as a form of currency in Europe and Australia, a practice we should probably bring back into fashion.
Rum (usually) comes from molasses, the sweet and syrupy residue of refining sugarcane into sugar. Molasses is over 50% sugar, but it also contains significant amounts of minerals and other trace elements, contributing to the final flavor.
You might find Rum masquerading itself under other nom de plumes, like Ron, Rom and Rhum.
Mount Gay Rum is the oldest existing Rum company in the World dating back to 1705. This is also the year Guy Fawkes tried to blow up Britain’s Parliament.
If the center of our galaxy had a signature scent, it would be Rum. Yup, astronomers studying a giant cloud in the Milky Way found a substance called ethyl formate, a chemical that smells suspiciously like Rum.
