A very limited treat from what you may know as the ‘White Oak Distillery’ from Hyogo, Japan. More specifically, from cask number 61071. Mikio Hiraishi, the founder of Akashi and the current head of Eigashima distillery, is going hard with the cask creativity, and the results are beyond mouth-watering.
This exciting tipple is a typical Akashi. It is produced in an intricate process that values quality over quantity. The 5-year stretch in Sherry cask leaves (lucky) us with a deliciously smooth and rich sip. Savor the dried fruits, butter, and cinnamon in every hard-to-get glass of this unique Whisky.

Japanese Whisky is connected both to Scotch and Bourbon. It’s a Scotch-style Spirit that’s matured in climates similar to Kentucky’s.
Japan is the second biggest producer of Single Malt Whisky in the world.
It's not uncommon for Japanese Whisky to be aged in mizunara (Japanese oak) casks. Suntory conducted a research on how mizunara oak influences Whisky flavor and found out it adds coconut notes to it.
Whisky or Whiskey? The spelling differs geographically. In Scotland, Japan, and some other parts of the world, distilleries usually spell it Whisky; in Ireland and the USA, they spell it Whiskey.
In recent years, Japanese Whiskies have won several top prizes at the World Whisky Awards and have consistently scored higher than Scotch Whiskies in blind tastings. Talk about a student surpassing the master!
The two biggest Whisky producers in Japan are Nikka and Suntory, major rivals.
